I don’t eat eggs, and they are in most diets for breakfast and snacks. I’m attempting an anti-inflammatory regimen that is high in protein, and am struggling with egg alternatives. What would be a one-for-one option so i can try to stay on track?
Eggs provide about 7-8 grams of protein each. A similar amount of protein would be provided by:
1 oz of any animal meat
4 oz tofu
8 oz milk or yogurt
½ cup beans
2 Tbsp (6 grams protein).
None of these would be an exact trade, as all foods have different nutrients, but the protein is very significant. Eggs are a good source of iron, choline and some fat-soluble vitamins.
